Sodium hexametaphosphate is an inorganic compound with the chemical formula (NaPO3) 6. It is a white crystalline powder that is soluble in water but insoluble in organic solvents. It is mainly used in the food industry as a quality improver, pH regulator, metal ion chelating agent, binder, and expansion agent.

Application
1. Mainly used in the food and industrial industries. The main applications in the food industry are:
(1) Sodium hexametaphosphate is used in meat products, fish sausages, ham, etc. It can improve water holding capacity, increase cohesiveness, and prevent fat oxidation;
(2) Used for soybean paste and soy sauce to prevent discoloration, increase viscosity, shorten fermentation period, and regulate taste;
(3) Used for fruit drinks and refreshing drinks, it can increase juice yield, increase viscosity, and inhibit the decomposition of vitamin C;
(4) Used for ice cream, it can improve expansion ability, increase volume, enhance emulsification, prevent paste damage, and improve taste and color;
(5) For dairy products and beverages to prevent gel precipitation;
(6) Adding it to beer can clarify the liquid and prevent turbidity;
(7) Used for canned beans, fruits and vegetables, it can stabilize natural pigments and protect food color;
