Chemical Expression	Glyceryl monostearate (GMS) is a widely used emulsifier in food and cosmetics. In food, Glyceryl monostearate is primarily added to bread, biscuits, pastries, cream, butter, and ice cream. In daily chemicals, Glyceryl monostearate is used in creams, frosts, hair conditioners, and oils, as well as a solvent for oils and waxes, a moisture-proof powder coating, and an opaque sunshade. Glyceryl monostearate GMS is produced by reacting glycerol with fatty acids (such as stearic, palmitic, or oleic acid), forming mono-, di-, and tri-esters. Only mono- and di-esters have emulsifying properties, with high-purity monoester (≈90%) obtained through distillation. Glyceryl monostearate GMS exhibits excellent surface activity, enabling emulsification, foaming, dispersion, defoaming, and starch anti-aging effects, making it the most widely used emulsifier in its field.
