Chemical Expression	Sodium citrate is a white crystalline particle or powder at room temperature, odorless, with a cool salty taste, and stable in the air. The relative density is 1.857 (23.5 ºC). If the crystal water is lost at 150 ºC, Sodium citrate will decompose upon further heating. Dissolved in water, the pH of the aqueous solution is about 8, and difficult to dissolve in ethanol. Sodium citrate is made by neutralizing, concentrating, and crystallizing citric acid with sodium hydroxide or sodium carbonate.
